Seed to Feed: Zesty Rosemary Steak Bites

These flavorful steak bites are one of my personal favourites, perfectly seasoned with fresh rosemary from our hydroponic garden. If you’ve been growing oregano, even better! If not, don’t worry—we’ll suggest a tasty alternative, and for those without an air fryer, we’ve got you covered with a stovetop method.

Ingredients:

For the Steak Bites:

  • 1 lb steak (sirloin or ribeye), cut into bite-sized pieces

  • 1 tbsp fresh rosemary, chopped

  • 1 tbsp fresh oregano, chopped (or substitute with 1 tsp dried oregano or 1 tsp Italian seasoning)

  • Salt and pepper to taste

For the Marinade:

  • 2 tbsp olive oil

  • 2 tbsp soy sauce (use gluten-free if needed)

  • 1 tbsp Worcestershire sauce

  • 1 tbsp lemon juice

  • 2 garlic cloves, minced

  • 1 tsp homemade stevia

  • 1 tsp smoked paprika


Instructions:

1. Marinate the Steak: In a bowl, combine the olive oil, soy sauce, Worcestershire sauce, lemon juice, minced garlic, stevia, and smoked paprika. Add the steak bites to the marinade, ensuring they’re well-coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for a deeper flavor).


Cooking Method 1: Air Fryer

2. Preheat the Air Fryer: Set your Ninja Foodi XL (or any air fryer) to 400°F (200°C) and preheat for about 5 minutes.

3. Air Fry the Steak Bites: Remove the steak bites from the marinade, allowing any excess to drip off. Place them in the air fryer basket in a single layer (cook in batches if necessary). Air fry at 400°F for 8-10 minutes, shaking the basket halfway through to ensure even cooking.

4. Finish and Serve: Once cooked to your desired doneness, remove the steak bites and toss them with the chopped rosemary and oregano (or your chosen substitute). Season with salt and pepper to taste. Let them rest for a few minutes before serving.


Cooking Method 2: Stovetop

2. Preheat the Pan: Heat a large skillet or cast-iron pan over medium-high heat. Add a drizzle of olive oil to the pan.

3. Cook the Steak Bites: Remove the steak bites from the marinade, letting any excess drip off. Place them in the hot pan in a single layer, cooking for 3-4 minutes on each side until browned and cooked to your desired doneness.

4. Finish and Serve: Once cooked, remove the steak bites from the pan and toss them with the chopped rosemary and oregano (or your chosen substitute). Season with salt and pepper to taste, and let them rest for a few minutes before serving.


Why Fresh Rosemary?

The fresh rosemary from your hydroponic setup really makes these steak bites shine, adding a depth of flavor you just can’t get from dried herbs. If you’re not growing oregano, feel free to substitute with a dash of dried oregano or Italian seasoning—this recipe is all about flexibility!
